The Peppers Mineral Springs Retreat – the grandest of regional Victoria's Grande Dames – has had a bit of makeover. First it unveiled the divine Tipperary Bar + Lounge and now weeks later we have Wild Birch Dining Room; a glorious room designed by Stuart Rattle and housed in the hotel's former Deco Restaurant. The $1 million makeover has transformed this landmark property into a smart and sophisticated country boutique hotel, worthy of the most celebrated and high brow guests.
In a class of its own and the epitome of elegance and rural hospitality, Peppers Mineral Springs Retreat was purpose -built as a private hotel in 1935. Since co-owners, Wayne Cross and Chris Malden, purchased the hotel in 2000, this comfortably luxurious yet intimate hotel has carved out a tradition of merging quintessential hospitality of rural Australia with impeccable attention to detail and discrete service. Malden and Cross felt a responsibility to retain the sense of history and romanticism that makes this property so special.
The makeover has been meticulously put together by internationally renowned designer, Stuart Rattle. Highly sought-after for transforming heritage and landmark properties, both residential and commercial, Stuart has mastered the art of designs that embrace 21st century style without sacrificing any of its considerable character. This is apparent in the many one-off, unique fittings and furniture throughout the lounges, bar, reception and restaurant that draw their inspiration from the history of the hotel and its region. These ever so elegant public spaces are now bedecked in polished wood, marble, parchment lighting and leather, accenting original 1930's feature detailing. The walls are covered with art collected by hotel owners, Chris Malden and Wayne Cross, as well as Stuart Rattle; a mix of sketches, original hotel photographs, a black and white photographic "Portrait of a Legacy" exhibition and original paintings.
