With a style reminiscent of European sophistication, the charming Conservatory is rapidly becoming a feature on the region's epicurean roadmap. The cafe culture has been fundamental to life in Daylesford and Hepburn Springs since the early Swiss Italians settled here in the mid 1800's. With this culture, the region has an imbedded love, heritage and respect for authentically delicious espresso coffee, pasta and handmade sausages. However the opening of the Conservatory represents the first time that high society mixes with cafe society.
The gardens at Peppers Mineral Springs Retreat are recognised as some of the most picturesque in regional Victoria. Weaving throughout the five acres on the property, these award winning gardens include a formal miniature hedged maze, Neptune pond, hidden Bay Tree sanctuary and pebbled avenue lined with majestic Poplar trees. Tucked on the back terrace of this landmark hotel, The Conservatory is a natural extension of the garden; opening out to all day sun with huge windows wrapping the room; elegantly furnished with an inspired assortment of soft cushioned banquettes, comfy cane chairs and hanging pendulum cane lamps. Open to the public and hotel guests seven days a week, for gourmet buffet breakfast and deliciously posh casual lunches.
